An easy cake that will make you famous

Family-famous is a real thing. And I suspect it may be remarkably better than worldly-famous. You get to bask in all the glowy affirmation and revel in your nieces’ and nephews’ fandom without the public scrutiny over your dating life.


I recently rose to new heights of family-famous when I invented this cake for our son’s birthday. The birthday boy had requested "brownie and cookie cake with whipped cream," which—a little surprisingly—is not a recipe that Google neatly serves up. So we went full Boudreaux and just made it up ourselves.


That made-up brownie-cookie cake was delicious beyond our wildest dreams. I'm not sure how exactly to convey this recipe, but I can't not attempt to share it with you. For the flavor payoff and visual impressiveness, it's shockingly low-effort. Enjoy.


Brownie-cookie cake with whipped cream


Ingredients

  • 2 boxes brownie mix of your choice (higher quality is better), plus the necessary listed ingredients to prepare

  • 2 tubes of prepared raw cookie dough, or the equivalent in another form (higher quality is better)

  • Whipped cream, sweetened to your taste (I prefer only the tiniest sweetness here, since the cake is already sweet)


Instructions

  1. Preheat the oven according to the brownie mix package directions.

  2. Line three round cake pans with parchment or grease with butter.

  3. Prepare the brownie mix according to the package directions.

  4. Divide the cookie dough into three equal amounts and press them into the bottom of each pan, forming a base that goes a little bit up the sides of each pan.

  5. Pour the brownie mix over the cookie dough, trying to pour equal amounts into each pan.

  6. Bake according to the brownie mix package directions. Important note: you will definitely have to monitor the cooking time in the latter half. It’s variable based upon the cookie dough you choose and your oven, altitude, etc. Eyeball the cookie layer for when it’s light golden brown. Use the clean toothpick method to confirm readiness. The brownie layer continue cooking a bit in its own heat.

  7. Cool each pan, then remove each cake.

  8. You will be stacking all three cake layers together. Generously slather whipped cream between each layer, then slather some more around the top and sides as frosting. Note: You could also use pudding, jam or preserves, whipped cream cheese, or regular cake frosting between the layers, if that sounds better to you.

  9. Return the now impressively-tall cake to the fridge for an hour or two so everything can set and meld a bit.

  10. Serve with certain victory in becoming a family-famous A lister.


P.S. This cake is excellent paired with strong dark coffee, hot or iced, and looks spectacular upon cutting the first slice.
